Why another book on food and health? Because eating and drinking are the fundamental determinants of health… and, after all, we’ll never be done talking about them. However, this book AIMS TO BE: a book that integrates drinking with eating to savor life and age healthily; a cookbook for jotting down or sketching your own »recipes«; a collection of 2D and 3D conceptualizations to visualize knowledge; a collection of short videos to watch that help you connect with reality; a transdisciplinary innovation that brings together expertise and experiences from some twenty disciplines; a reflection on transdisciplinary food health grounded in evidence and best practices; and a pantry of ideas to digest as you seek your own dietary balance. In short, this »white paper« is the work of a serious team that doesn’t take itself too seriously, so that you, dear readers, can leave your mark on it.
About the authors. This dynamic and synergistic trio is expert in health, food, and drink—in research, clinical practice, and sommelier work. All three authors are members of the Loricorps research unit, affiliated with the Research Center of the Montreal University Institute of Mental Health and the University of Quebec at Trois-Rivières; Johana Monthuy-Blanc is a professor and researcher in nutritional health, Émie Therrien is a research professional and clinician specializing in eating health, and Jessica Harnois is a sommelier dedicated to the health aspects of drinking.
Johana Monthuy-Blanc is a professor at UQTR and Director of LoriCorps. Her doctoral and post-doctoral academic career in the health sciences, humanities, social sciences and technological sciences has enabled her to take an inter- and even trans-disciplinary approach to eating disorders for over 10 years. Originally from the educational sciences, this professor has a particular interest in pedagogy in all the developments and creations carried out to date by her team (virtual environment, transdisciplinary intervention program for eating disorders - PI2TCA -, etc.).
